Nigeria could save $252m yearly if cassava flour is used in bread – IITA

The International Institute of Tropical Agriculture (IITA) says Nigeria will save about $252 million every year if the country mixes cassava flour in wheat floor in making bread.

According to IITA which says it has successfully produced bread with 40 percent cassava flour that has similar eating qualities as 100% wheat flour bread, the innovation will improve the livelihoods of cassava farmers in the country.
